OUR SERVICES
CCOVI Analytical Services lab is a full-service facility that offers competitive pricing packages for a wide range of standard analytical services to the grape and wine, cider, beer, and distillery industries including but not limited to:
- Juice, wine, and alcoholic beverage analysis for Brix, pH, TA, VA, residual sugar, alcohol, free and total SO2, malic acid, yeast assimilable nitrogen (YAN), protein stability, cold stability, ethyl acetate, methanol, methoxypyrazines, Brettanomyces markers, potassium, copper, and sodium, as well as microbial examination.
We now offer these services:
- Yeast identification in wine – $200 per sample (3 species)
- Sorbic acid in juice, cider, and wine – $35 per sample
Every sample is tested in duplicate using validated methods. We strive to provide swift turnaround service on all analyses.

Please contact us to discuss any requests for contract projects (e.g. winemaking or vineyard trials) or special analyses such as cork moisture content.

The Analytical Services lab is located in Inniskillin Hall, room 215, at Brock University (1812 Sir Isaac Brock Way).

Navigate to Brock University’s northeast entrance at John Macdonell Street off Glenridge Avenue. Turn west into campus. There will be a roundabout, take the second exit. Drive forward toward the buildings. Inniskillin Hall is straight ahead, with purple-red accents on the windows, and the new VPMI is attached to its right.
There are two “Reserved CCOVI” parking spots across from the building available for quick parking. Put on your four-way flashing lights, walk down a few stairs, then enter the new building through the double glass doors. Walk through the white foyer to the Inniskillin Hall foyer, where a sign will direct you to turn left toward a hallway. Walk toward the purple doors, follow the hallway around a right turn, and you’ll find IH215 on the right. There are more forms and information at the table outside the lab if the door is closed.
