Steven Trussler, Professional and Continuing Studies Instructor at Brock’s Cool Climate Oenology and Viticulture Institute (CCOVI), leads a group of cider industry insiders on an exploration of aromatic compounds in a sold-out session “Funk, Fault or Phenolic Compound?” on Friday, Feb. 3 as part of this year’s CiderCon. The annual event was developed as an outlet for the commercial cider industry to meet, share ideas and collaborate and Trussler has frequently been invited to share his expertise as a speaker and moderator. He teaches the Cider and Perry Production Foundation course at CCOVI, which will be offered as a micro-credential for the first time April 17 to 21.
