The Canadian thirst for knowledge was quenched this week as Brock University’s Cool Climate Oenology and Viticulture Institute again offered its Cider and Perry Production program — the first of its kind in Canada — to a fresh crop of students. The course has drawn students from six provinces whose backgrounds have ranged from growers and professional/hobby cider-makers, to beverage industry professionals.
