Exploring grape and wine science

Local high school students got hands-on experience conducting lab tests during Biological Sciences Day at Brock University’s Cool Climate Oenology and Viticulture Institute (CCOVI) on Thursday, April 25. From left: CCOVI Senior Lab Demonstrator and Professional Studies Instructor Marissa Neuner supervised Thorold Secondary School students Lucia Hu, Monika Koleva and Ana Jaramillo as they carefully practiced titration, adding one solution of a known concentration to another, to determine the acidity of the grape juice sample. This experiment is a fundamental tool and skill for grape and wine science as grape acidity influences the taste of wine.
