The Ontario Wine Appellation Authority, in partnership with Brock's Cool Climate Oenology and Viticulture Institute (CCOVI), hosted its Pre-Harvest Winemaker’s Forum at the University on Thursday, Aug. 15. Limited to winemakers, viticulturists and grape growers, the exclusive day began with an industry-insider speakers’ panel on “Best Practices in Growing and Vinifying Riesling in Ontario,” and featured several tasting flights of Riesling. The afternoon session, led by CCOVI’s Micro-credential Co-ordinator Steven Trussler, was a specialized ‘boot camp’ on advanced wine flavour chemistry for winemaking veterans and those fairly new to the industry. The pre-harvest warm-up reviewed a wide range of flavour compounds found in finished wines and facilitated discussion about how winemakers can reach their final wine goals.
