{"id":87049,"date":"2023-07-27T16:49:54","date_gmt":"2023-07-27T20:49:54","guid":{"rendered":"https:\/\/brocku.ca\/brock-news\/?p=87049"},"modified":"2023-07-29T06:52:22","modified_gmt":"2023-07-29T10:52:22","slug":"gallery-school-of-cool-wine-celebration-returns","status":"publish","type":"post","link":"https:\/\/brocku.ca\/brock-news\/2023\/07\/gallery-school-of-cool-wine-celebration-returns\/","title":{"rendered":"GALLERY: School of Cool wine celebration returns"},"content":{"rendered":"<p>Wine glasses were swirling last week with the School of Cool back in session.<\/p>\n<p>The event was held as part of the 13th annual <a href=\"https:\/\/www.coolchardonnay.org\/\" target=\"_blank\" rel=\"noopener\">International Cool Climate Chardonnay Celebration<\/a> (i4C) that took place at White Oaks Conference Resort and Spa in Niagara-on-the-Lake on Thursday, July 20.<\/p>\n<p>Co-sponsored by Brock University\u2019s Cool Climate Oenology and Viticulture Institute (CCOVI), the event welcomed hundreds of participants representing 62 VQA Ontario wineries as well as industry partners from Nova Scotia, British Columbia, France, New Zealand and Germany.<\/p>\n<p>\u201cIt is amazing to think about the growth of i4c and its educational component, the School of Cool, in Niagara,\u201d says Barb Tatarnic, CCOVI&#8217;s Manager of Professional Studies and Outreach. \u201cSomething that started as a conversation between Niagara winemakers in 2009 has become an international celebration devoted to Chardonnay \u2014 one of the most widely cultivated varietals in Ontario.\u201d<\/p>\n<p>Chardonnay is a wine often complemented with a bit of cool, either cooled by altitude, latitude, marine influence or climatic conditions.<\/p>\n<div id=\"attachment_87061\" style=\"width: 500px\" class=\"wp-caption alignright\"><img aria-describedby=\"caption-attachment-87061\" decoding=\"async\" loading=\"lazy\" class=\" wp-image-87061\" src=\"https:\/\/brocku.ca\/brock-news\/wp-content\/uploads\/2023\/07\/i4C_12-1050x700.jpg\" alt=\"Seated at a table in a conference room, Aidan Buis smells wine in a glass while Benjamin Whitty looks forward holding a wine glass and Keelan Buis and Morgan Buis look on.\" width=\"490\" height=\"327\" \/><p id=\"caption-attachment-87061\" class=\"wp-caption-text\">From left: fourth-year student Aidan Buis, from Brock\u2019s Cool Climate Oenology and Viticulture Institute, samples Chardonnay alongside 13th Street Winery Director of Sales Benjamin Whitty and International Cool Climate Chardonnay Celebration participants Keelan Buis and Morgan Buis.<\/p><\/div>\n<p>The Niagara Peninsula, with its cool climate extremes, moderating lake effects and the escarpment\u2019s steep slopes that trap and recirculate breezes coming off the water, provides vintners with all the necessary elements for a diverse portfolio of wines.<\/p>\n<p>The School of Cool signature event included a keynote address by Master of Wine Michelle Cherutti-Kowal followed by three industry sessions with tastings: \u201cLearn to taste like a Master of Wine \u2014 A study in Chardonnay \u2014 2.0,\u201d \u201cBlend like a Winemaker\u201d and \u201cFilling in the \u2018Blancs.\u201d<\/p>\n<p>Participants, including students and alumni from Brock\u2019s Oenology and Viticulture (OEVI) program, got a peek behind the winemaking curtain as Queenston Mile Vineyard Winemaker Rob Power (BSc \u201900) led a panel of four Niagara winemakers who presented their unfinished Chardonnays to illustrate some of the process choices winemakers make and what goes into the final blend of 100 per cent VQA Chardonnay.<\/p>\n<div id=\"attachment_87062\" style=\"width: 1060px\" class=\"wp-caption alignleft\"><img aria-describedby=\"caption-attachment-87062\" decoding=\"async\" loading=\"lazy\" class=\"size-medium wp-image-87062\" src=\"https:\/\/brocku.ca\/brock-news\/wp-content\/uploads\/2023\/07\/i4C_13-1050x788.jpg\" alt=\"Five people stand together outside.\" width=\"1050\" height=\"788\" \/><p id=\"caption-attachment-87062\" class=\"wp-caption-text\">From left: Two &#8220;What Kind of Cool Are You?&#8221; session participants speak with Taylor MaGee, CCOVI Administrative Assistant; Barb Tatarnic, CCOVI Manager of Professional Studies and Outreach; and Daniel Phillipow, Brock Oenology and Viticulture student, at the \u201cChardonnay in the Vineyard World Tour Tasting and Dinner\u201d at the Riverside Inn in Niagara-on-the-Lake on Saturday, July 22.<\/p><\/div>\n<p>Power, who graduated at the top of CCOVI\u2019s inaugural Class of 2000, has worked tirelessly for the past 20 years to innovate within the Niagara wine industry. Widely considered as one of the leading Canadian winemakers by colleagues, media and critics alike, Power provided commentary on blends and vinifying unique varietals.<\/p>\n<p>Providing valuable insight into cool climate winemaking and viticulture, Winemakers Casey Kulczyk of Westcott Vineyards, Philip Brown of Jackson Triggs, Jessica Otting of Tawse Winery and Yvonne Irvine of Queenston Mile Vineyard each pulled two unfinished, unfiltered wines from their barrel cellars for the educational session.<\/p>\n<p>Each wine, about 10 to 14 months from being complete and bottled only a few days prior, was used as part of a blind tasting session that discussed barrel size and shape, fermentation and more.
