{"id":81003,"date":"2022-10-11T12:09:37","date_gmt":"2022-10-11T16:09:37","guid":{"rendered":"https:\/\/brocku.ca\/brock-news\/?p=81003"},"modified":"2022-10-11T17:11:38","modified_gmt":"2022-10-11T21:11:38","slug":"brock-students-experience-niagara-harvest","status":"publish","type":"post","link":"https:\/\/brocku.ca\/brock-news\/2022\/10\/brock-students-experience-niagara-harvest\/","title":{"rendered":"Brock students experience Niagara harvest"},"content":{"rendered":"<p>Harvest is in full swing in the Niagara region and Brock University students got in on the action last week.<\/p>\n<p>As part of their third-year Wine Chemistry course, students in Brock\u2019s Oenology and Viticulture (OEVI) program are tasked with making both a red and white wine and experimenting with different winemaking techniques to see how it changes the final product.<\/p>\n<p>Students began their winemaking projects last week by pressing 300 kilograms of Riesling and 140 kilograms of Gamay Noir.<\/p>\n<p>The project is particularly special for Brock graduate Jessica Solanki (BSc \u201921), who is now working as a Lab Demonstrator at the Cool Climate Oenology and Viticulture Institute (CCOVI), after graduating from the Oenology and Viticulture (OEVI) program in 2021.<\/p>\n<p>\u201cI truly valued my time at Brock, especially my OEVI courses,\u201d she said. \u201cIt\u2019s where I learned the most and made connections with classmates within the industry, with whom I continue to connect.\u201d<\/p>\n<div id=\"attachment_81005\" style=\"width: 388px\" class=\"wp-caption alignright\"><img aria-describedby=\"caption-attachment-81005\" decoding=\"async\" loading=\"lazy\" class=\" wp-image-81005\" src=\"https:\/\/brocku.ca\/brock-news\/wp-content\/uploads\/2022\/10\/Vince_Heck-1050x700.jpg\" alt=\"A man fills a carboy with white grape juice.\" width=\"378\" height=\"252\" \/><p id=\"caption-attachment-81005\" class=\"wp-caption-text\">Third-year Oenology and Viticulture student Vince Heck collects Riesling juice for his winemaking project.<\/p><\/div>\n<p>Solanki said she is excited to return to the University and to have the opportunity to be on the other side of the classroom, teaching the labs.<\/p>\n<p>\u201cHaving this come full circle and having the ability to contribute to the students\u2019 experience in the OEVI course is a dream,\u201d she said. \u201cIt is incredible to share my passion with the next generation of growers and winemakers.\u201d<\/p>\n<p>The grapes for the project were generously donated by Solanki\u2019s family, the Oppenlaenders of <a href=\"https:\/\/www.huebelgrapesestates.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Huebel Grapes Estates<\/a> in Niagara-on-the-Lake.<\/p>\n<p>\u201cMy family knows how important it is that students have ripe, good quality fruit for their winemaking projects,\u201d she said. \u201cIt sets them up for success.\u201d<\/p>\n<p>Vince Heck, a third-year OEVI student, said he\u2019s looking forward to working with high-quality fruit and varieties he enjoys.<\/p>\n<p>\u201cI\u2019m excited to get to work with Riesling and Gamay,\u201d he said. \u201cFor a lot of us, even those who have worked in the industry, this is the first time we\u2019ve been able to take the reins on the ferment \u2026 Even though it\u2019s really small volume, it\u2019s cool to have the opportunity to set up your own fermentation and make all of the relevant decisions.\u201d<\/p>\n<p>For Heck, originally from Alberta, the decision to enrol at Brock \u201cfelt like the natural choice,\u201d as the OEVI program is the only undergraduate degree program of its kind in Canada.<\/p>\n<p>\u201cThe degree program provides more of a fundamental understanding,\u201d he said. \u201cEspecially nowadays, biotech is moving so fast that having a better understanding of the science behind everything just means you will be able to be more flexible moving forward.\u201d<\/p>\n<p>Having worked in wine production in British Columbia\u2019s Okanagan Valley prior to attending Brock, Heck said he was excited by the prospect of learning from CCOVI\u2019s researchers.<\/p>\n<p>\u201cYou get to develop relationships with people who are experts in their field,\u201d said Heck. \u201cIf I had a problem when I was out in the workforce, they are the people who I would go talk to.
