{"id":62667,"date":"2019-12-11T13:58:45","date_gmt":"2019-12-11T18:58:45","guid":{"rendered":"https:\/\/brocku.ca\/brock-news\/?p=62667"},"modified":"2020-04-07T14:34:13","modified_gmt":"2020-04-07T18:34:13","slug":"award-winning-wine-bubbles-from-fizz-club","status":"publish","type":"post","link":"https:\/\/brocku.ca\/brock-news\/2019\/12\/award-winning-wine-bubbles-from-fizz-club\/","title":{"rendered":"Award winning wine bubbles from Fizz Club"},"content":{"rendered":"<p>Adam Pearce, winemaker at Two Sisters Vineyards, hadn\u2019t had much experience making sparkling wine before Fizz Club, but now he\u2019s crafted a unique bubbly that recently won a big award.<\/p>\n<p>Pearce made the first sparkling Cabernet Franc in Ontario, which is a grape traditionally used for red wine opposed to sparkling.<\/p>\n<p>His \u201cBlanc de Franc\u201d sparkling won Sparkling Wine of the Year at the 2019 All Canadian Wine Championships (ACWC), and he credits Fizz Club for his success.<\/p>\n<p>\u201cI went on the first Fizz Club trip to Champagne and that was really inspirational,\u201d said Pearce.\u00a0\u201cThrough all the technical visits we did there, I soaked in as much as I could and came back and applied that.\u201d<\/p>\n<p>Fizz Club is a special group\u00a0for sparkling wine and those who make it, providing a rare opportunity to compare notes and exchange ideas, taste wines, hear the latest research and visit other sparkling wine regions.<\/p>\n<p>The sparkling wine network was created at Brock University in 2013 with a handful of winemakers producing it. Fizz Club, which is\u00a0organized by the Cool Climate Oenology and Viticulture Institute (CCOVI) and led by Senior Scientist Belinda Kemp, is only open to sparkling winemakers or winemakers considering a sparkling wine program.<\/p>\n<p>Now in its seventh year, Fizz Club has become a national event. More than 40 sparkling winemakers from across Canada travelled to Brock on Wednesday, Dec. 10 to take part.<\/p>\n<p>At this year\u2019s event, all the wines tasted were made from non-traditional sparkling wine grapes, including Riesling, Pinot Gris, Gamay, a blend of varieties out of Qu\u00e9bec and Pearce\u2019s Cabernet Franc \u201cBlanc de Franc.&#8221;<\/p>\n<p>\u201cThat has been a fascinating journey to watch Adam and Two Sisters with that wine,&#8221; said Kemp. &#8220;To see that wine come out and flourish the way it has is wonderful. Fizz Club has given people the courage to experiment in the winery with regards to this wine style. We are seeing bolder moves from winemakers trying new varieties like Pinot Gris and Cabernet Franc to great success.\u201d<\/p>\n<div id=\"attachment_62674\" style=\"width: 407px\" class=\"wp-caption alignright\"><img aria-describedby=\"caption-attachment-62674\" decoding=\"async\" loading=\"lazy\" class=\" wp-image-62674\" src=\"https:\/\/brocku.ca\/brock-news\/wp-content\/uploads\/2019\/12\/zach-everett-copy.jpg\" alt=\"\" width=\"397\" height=\"298\" \/><p id=\"caption-attachment-62674\" class=\"wp-caption-text\">Zach Everett<\/p><\/div>\n<p>Zach Everett, winemaker at Magnetic Hills Winery in New Brunswick, has been attending Fizz Club events and trips for the last two years and has just bottled his first sparkling wines.<\/p>\n<p>\u201cFizz Club has allowed me to jump start my sparkling wine program by saving me years of trial and error,&#8221; said Everett. &#8220;It\u2019s helped me develop my taste buds and confidence and allowed me to stake my claim on the sparkling wine world.&#8221;<\/p>\n<p>He\u2019s doing that by also experimenting with something different. In addition to making wine from grapes, he\u2019s also making sparkling fruit wines, using both rhubarb and blueberries. He is one of only a handful of producers of sparkling fruit wines in the world.<\/p>\n<p>\u201cIt is something that is very rare, but flavour wise it can really work if done properly,&#8221; said Everett. &#8220;I believe there is a huge future in it. It is not as fruit forward as you would expect. I can make versions that are reminiscent of Prosecco and I can make versions that are reminiscent of Champagne.\u201d<\/p>\n<p>CCOVI\u2019s Barb Tatarnic, who is the outreach manager and works with Kemp to organize the event said that when Fizz Club first started, most of the members were based in Niagara.
