As wine lovers ponder which bottle of bubbly to pop this holiday season, winemakers from across Canada will be swapping secrets for making the best sparkling wine this week at Brock University.<\/p>\n
Eighty of Canada\u2019s top sparkling winemakers will\u00a0travel to\u00a0Brock on Thursday Dec. 6 for the annual Fizz Club \u2014 a members-only gathering\u00a0where winemakers compare notes, discuss\u00a0triumphs\u00a0and\u00a0challenges relating to sparkling wine production\u00a0and learn about new research developments.<\/p>\n
Organized by Brock\u2019s Cool Climate Oenology and Viticulture Institute (CCOVI) and led by senior scientist Belinda Kemp, this year\u2019s Fizz Club will be the largest gathering to date with attendees\u00a0from\u00a0Ontario, B.C., Quebec and Nova Scotia.<\/p>\n
\u201cWhen we started this, most of the winemakers who attended Fizz Club were based in Niagara,\u201d said Kemp. \u201cNow\u00a0in its sixth year, we have winemakers coming from all across Canada,\u00a0including more\u00a0than 20 wineries from Quebec.\u201d<\/p>\n
As Fizz Club grows in popularity, so do Fizz-loving consumers.\u00a0More\u00a0than 90\u00a0local\u00a0wineries are now producing sparkling wines and sales are surging with overall sales of VQA sparkling up 13 percent year-over-year.<\/p>\n
Kemp will share the latest research CCOVI is doing to help local grape growers and winemakers produce quality sparkling wine,\u00a0including new results from studies regarding how different soil types affect sparkling wine flavour, mouthfeel and texture.<\/p>\n
Excitement continues to build around Canadian sparkling wine as last week CCOVI\u00a0hosted the world\u2019s largest Canadian sparkling wine tasting, with 135 bottles from four provinces.
