{"id":53728,"date":"2018-10-11T11:26:30","date_gmt":"2018-10-11T15:26:30","guid":{"rendered":"https:\/\/brocku.ca\/brock-news\/?p=53728"},"modified":"2018-10-11T15:14:41","modified_gmt":"2018-10-11T19:14:41","slug":"co-op-gives-award-winning-student-winemaker-a-career-boost","status":"publish","type":"post","link":"https:\/\/brocku.ca\/brock-news\/2018\/10\/co-op-gives-award-winning-student-winemaker-a-career-boost\/","title":{"rendered":"Co-op gives award-winning student winemaker a career boost"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">Having already produced an award-winning wine and taken the next step in his career, Oenology and Viticulture (OEVI) student Nick Pappas will have plenty to celebrate when he graduates Friday.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pappas, who completed his OEVI degree in the summer, is working his first harvest at Inniskillin winery in Niagara-on-the-Lake as a harvest intern.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The role was fitting for the 22-year-old Markham native thanks to his co-op experience working production and retail at Marynissen Estates Winery last year.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cMy co-op experience helped me decide that I want to be a winemaker,\u201d Pappas said.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">During his time at Marynissen, he had the chance to make his own Riesling thanks to Brock alumnus Marc Pistor (BSc \u201906), owner of Vendimia North \u2014 a contract winemaking and consultation service for Ontario wineries.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI got really nervous and anxious when Marc first gave me control of it,\u201d said Pappas. \u201cIn the back of my head, I went back to Wine Processing and Equipment class, where my group did an arrested fermentation Riesling that didn\u2019t turn out well. But I wanted to do it again because I knew what I did wrong, and how to fix it.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pappas was given the juice and control of the fermentation process and said he knew he had to bring the temperature down slowly to stop the fermentation at his target sugar level. With Pistor\u2019s approval, Pappas decided to make an off dry-style Riesling, leaving a bit of residual sugar.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cAll my classes were a great foundation for learning about everything in the vineyard and everything in the cellar, and how it all comes together to make wine,\u201d Pappas said.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The hands-on experience he gained during his co-op placement allowed him to make an award-winning wine. His Marynissen Estate Winery \u2014 2017 Heritage Riesling won a bronze medal at the<\/span><a href=\"http:\/\/allcanadianwinechampionships.com\/acwc-2018-results\/\" target=\"_blank\" rel=\"noopener\"> <span style=\"font-weight: 400;\">All Canadian Wine Championships<\/span><\/a><span style=\"font-weight: 400;\"> in June.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cWhen we finished that wine, we could tell we had something of very good quality,\u201d Pistor said. \u201cIt says a lot about Nick\u2019s understanding of the process of winemaking.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">They made 150 cases, and his Riesling is part of Marynissen Estates \u201cPlatinum Series\u201d \u2014 its top-tier wines.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">As a winemaker, Pistor said he enjoys working with students of the Oenology and Viticulture program inside Brock\u2019s Cool Climate Oenology and Viticulture Institute (CCOVI), and that they are well prepared to enter the workforce.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI normally don\u2019t have to go through too many instructions with CCOVI students and know they have an idea of what they are doing,\u201d he said. \u201cIn the winery, I\u2019m always impressed by how quickly they pick up stuff, how many of the right questions they\u2019re asking and how willing they are to ask those questions.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">During his time at Brock, Pappas also experienced academic success as the 2018 recipient of the $5,000<\/span><a href=\"http:\/\/cuvee.ca\/\" target=\"_blank\" rel=\"noopener\"> <span style=\"font-weight: 400;\">Cuv\u00e9e Award for Academic Excellence<\/span><\/a><span style=\"font-weight: 400;\">. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">He said he is able to take a day off from the busy harvest season to cross the Convocation stage on Friday, Oct. 12, and is ready for the next stage in his winemaking career. \u00a0<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Having already produced an award-winning wine and taken the next step in his career, Oenology and Viticulture (OEVI) student Nick Pappas will have plenty to celebrate when he graduates Friday.<\/p>\n","protected":false},"author":52,"featured_media":53729,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":[],"categories":[119,41,1,4],"tags":[5050,61,120,855,1657,4811,884,6092],"_links":{"self":[{"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/posts\/53728"}],"collection":[{"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/users\/52"}],"replies":[{"embeddable":true,"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/comments?post=53728"}],"version-history":[{"count":3,"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/posts\/53728\/revisions"}],"predecessor-version":[{"id":53736,"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/posts\/53728\/revisions\/53736"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/media\/53729"}],"wp:attachment":[{"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/media?parent=53728"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/categories?post=53728"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/brocku.ca\/brock-news\/wp-json\/wp\/v2\/tags?post=53728"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
