{"id":53490,"date":"2018-09-28T14:24:34","date_gmt":"2018-09-28T18:24:34","guid":{"rendered":"https:\/\/brocku.ca\/brock-news\/?p=53490"},"modified":"2018-09-28T15:30:06","modified_gmt":"2018-09-28T19:30:06","slug":"grape-harvest-begins-for-ccovi-students","status":"publish","type":"post","link":"https:\/\/brocku.ca\/brock-news\/2018\/09\/grape-harvest-begins-for-ccovi-students\/","title":{"rendered":"Grape harvest begins for CCOVI students"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">The students at Brock\u2019s Cool Climate Oenology and Viticulture Institute (CCOVI) got their hands dirty this week as harvest season is now underway for the Niagara wine industry.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A group of third-year students pressed 300 kilograms of Pinot Noir grapes this week in the teaching winery and 300 kilograms of Gewurztraminer last week, giving them hands-on experience learning about the winemaking process.<\/span><\/p>\n<div id=\"attachment_53493\" style=\"width: 278px\" class=\"wp-caption alignright\"><img aria-describedby=\"caption-attachment-53493\" decoding=\"async\" loading=\"lazy\" class=\" wp-image-53493\" src=\"https:\/\/brocku.ca\/brock-news\/wp-content\/uploads\/2018\/09\/student-harvest3.jpg\" alt=\"\" width=\"268\" height=\"357\" \/><p id=\"caption-attachment-53493\" class=\"wp-caption-text\">OEVI students pressed 300 kilograms of Pinot Noir grapes in the CCOVI teaching winery this week.<\/p><\/div>\n<p><span style=\"font-weight: 400;\">\u201cThe theoretical knowledge that they are getting in class is very important,\u201d said Steven Trussler, oenology and viticulture senior lab instructor with CCOVI. \u201cBut being able to see it in practical application is even more important, because they will be asked to apply that theory once they get out into the industry.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The students are using the juice to make wine for their class projects. They are making both a red and white wine, and experimenting with different fermentations to see how it changes the final product. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">For student Benjamin Whitty, who comes from a grape growing family that owns 13th Street Winery in St. Catharines, this isn\u2019t his first harvest. But it is his first time making his own wine. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cGrowing up with a farming background you learn more of the manual labour opposed to the science behind it,\u201d said Whitty. \u00a0\u201cDoing all the analytical tests and making decisions based on that information is so important.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Harvest began mid-September for Niagara growers and is one of the busiest times for the industry, and for OEVI students.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cIt\u2019s my favourite time of the year,\u201d said Trussler. \u201cThe students are doing the same tests on the grapes as the local wineries right now, testing for things like sugar and acid levels. They are dealing with the same crop and perhaps challenges, and that really solidifies the connection CCOVI has with the industry.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The grapes students are working with are donated by industry partners \u2014 grape growers and winemakers in the region.
