{"id":104952,"date":"2025-10-01T12:29:16","date_gmt":"2025-10-01T16:29:16","guid":{"rendered":"https:\/\/brocku.ca\/brock-news\/?p=104952"},"modified":"2025-10-03T09:29:32","modified_gmt":"2025-10-03T13:29:32","slug":"ccovi-knowledge-pours-in-at-grape-and-wine-festival","status":"publish","type":"post","link":"https:\/\/brocku.ca\/brock-news\/2025\/10\/ccovi-knowledge-pours-in-at-grape-and-wine-festival\/","title":{"rendered":"CCOVI knowledge pours in at Grape and Wine Festival"},"content":{"rendered":"<p>Brock&#8217;s <a href=\"https:\/\/brocku.ca\/ccovi\/\" target=\"_blank\" rel=\"noopener\">Cool Climate Oenology and Viticulture Institute (CCOVI)<\/a> was on hand during the Niagara Grape and Wine Festival to share expert insights with attendees.<\/p>\n<p>CCOVI Senior Scientist in Oenology Jennifer Kelly led an interactive \u201cThis or That\u201d seminar on Sunday, Sept. 28. Attendees learned the elements of a structured wine tasting and were treated to\u00a0three themed wine comparisons highlighting differences in styles, winemaking techniques and blending strategies that enhance varietal flavour.<\/p>\n<p>During the session, Kelly also instructed participants to plug their noses, chew on a jelly bean and guess the flavour then unplug their nose and repeat the process.
