CCOVI students learn to craft cider

Cynara Kennedy, Eric Robert and Marco Cheng, students from Brock University's Cider and Perry — Foundation course, prepare to inoculate cider with yeast as part of the production process. Offered by Brock’s Cool Climate Oenology and Viticulture Institute (CCOVI), the course provides registrants with a hands-on practical program based on lectures, lab work, cider making and tastings. Participants learn the step-by-step guide to cider and perry production through an essential grounding in the chemistry and microbiology of cider and perry. The course was also recently approved by the Ministry of Colleges and Universities as a micro-credential.
